Headless Shopify is the general approach: a custom front end talking to Shopify via APIs. Hydrogen is Shopify's own React framework for doing exactly that — an opinionated, Shopify-native way to build headless, with Oxygen hosting included. You can build headless without Hydrogen (e.g. plain Next.js), but Hydrogen removes a lot of the plumbing.
Checkout, customer accounts, and the admin all work as normal since Hydrogen still uses Shopify's backend. Theme-based app embeds that inject into Liquid don't carry over automatically — those need to be re-implemented in the storefront or replaced with API-based equivalents.
